Since we had plans to go to my parents’ house for Easter Sunday brunch, I decided I would let the bananas get overripe with the idea to make some sort of bread or muffin. I decided to make something different,, an oatmeal bake and it turned out delicious! There is no added sugar (i.e. white sugar, honey, maple syrup, etc.) because the overripe bananas and blueberries provide the perfect amount of sweetness. The walnuts give a nice crunch.
Whether served at a weekend brunch or for a weekday breakfast, plain Greek yogurt is a great compliment to this dish. This bake can be made ahead of time. Simply reheat in the oven (or microwave) when ready to eat. Enjoy!
